“The coastal environment provides the backbone to Sanctuary Whisky,” says Kevin Titcomb, master distiller at Phillips Brewing Co’s Fermentorium Distillery. “From the air to the water to the soil, the island is imbued in our spirits. The climate is ideal for growing our barley, while the pristine water and clean coastal air supply a discernible freshness and brightness.”

The Process
The journey of Sanctuary Whisky begins on the Saanich Peninsula, where the island’s clay-rich, silty soil proves perfectly suited for growing robust barley. This environment, naturally tolerant to the coastal salt air, produces a grain that serves as the foundation of every bottle.
Unlike most modern distilleries that outsource their grain processing, the team at Phillip’s Fermentorium malts 100% of their barley on-site. Using a custom-designed malting bed, this allows them to guide the flavour from the very first sprout. From there, the barley is brewed into a “wash” using a high-efficiency mash press and the distillery’s own proprietary ale yeast to maximize the development of aromas and flavours.
Inside the distillery, the whisky is crafted using a blend of tradition and innovation. After distillation in a combination of a 1920’s copper pot still and more modern column still, the new make spirit is then tucked away to mature in a variety of casks, including bourbon, wine and seasoned beer.

Sanctuary Single Malt Whisky – Classic Edition, the brand’s latest limited release, is defined by balance, clarity and a quietly traditional character.
In the glass, it reveals a pale gold hue. The nose opens with vanilla, poached pear and baking spice, while the palate is lighter-bodied, layered with honey, orchard fruit, subtle citrus and a gentle spice that coats the palate. The experience concludes with a smooth, warming finish of wood and spice, a refined expression matured exclusively in ex-bourbon casks and shaped by the distinctive distillation philosophy.
“It’s a whisky that feels grounded and quietly refined,” says Titcomb. “Very approachable on its own, it also stands up well in your favourite whisky cocktail.”
The whisky is crafted to encourage a sense of stillness and presence. It’s meant to be savoured thoughtfully, whether enjoyed neat during a quiet evening or shared with a small circle of friends.

While Phillips Brewing is best known for its award-winning craft beer, many people are surprised to learn the company also makes whisky and other spirits.
