Enjoy all the bright, intense flavours of Italy at this four-course, cocktail-paired dinner from chef Luke Boswell. It begins with burrata and peperoni cruschi dressing, paired with a Lambrusco Spritz; then meanders through lasagne e cicciari, paired with the smoky, whisky-based Gregorio Vittorio cocktail. Next, it’s braised lamb served with full-bodied red Aglianico wine, and a grand finish of Bar Corso’s own Espresso Martini and Lucano Caffe sorbet.

Fords Gin returns to Brass Fish for the third annual edition of Old School Cool: A Celebration of the Iconic Gin Classics. Join us at Brass Fish as we welcome Fords Gin for a night of gin cocktails, gin & tonics, and, of course, gin Martinis. Explore the botanicals of gin through an aromatic demonstration table, experiment with flavors with a DIY G&T menu and enjoy a selection of classic and modern gin Martini variations. Savour all the fragrantly spiced flavours of the Middle East. This four-course dinner translates the traditions and history of Afghanistan into refined dishes served family-style to celebrate the Afghan tradition of the “dastarkhan” dining table. Each course is paired with a cocktail flavoured with products from Giffard, a family-run business that has been making premium liqueurs and syrups in Angers, France, since 1885. Plus there will be additional cocktails to order à la carte. As the Afghans know: a shared meal (and cocktails) is shared culture.

This four-course cocktail-paired dinner takes your tastebuds on a journey that begins in Cognac more than four centuries ago, when the wine-growing Maison Ferrand was first established. In 1989, proprietor Alexandre Gabriel made it his mission to breathe new life into the old brand, using traditional craft production methods and premium ingredients. He began with Ferrand Cognac, then followed it with Citadelle Gin, Plantation Rum and Dry Curaçao. Follow the story via craft cocktails using these exceptional spirits, with gourmet dishes to accompany them.

In Venice, “giro d’ombra” means “round of shadows,” the local term for a night of bar hopping from bacaro to bacaro. The drinks that are served at these bacari are called “ombra” (shadows), a reference to a time when merchants would sell their wines in the town squares, constantly shifting location to keep their wines and their customers cool in the shadows. This dinner looks at the traditional bacaro experience through the lens of Vancouver cocktail culture. The food will be rooted in Venetian classics, while the cocktails will be more playful and will include elements of the North American cocktail canon.

Let Chef Takuya Motohashi (Soyfish) and Bar Manager Troy Resch (Nammos Estiatorio) use their talent and expertise to take guests on an intimate, two-hour culinary adventure. Guests can expect a (mostly) raw omakase experience with mini Kujira-based cocktails thoughtfully paired over multiple courses. During the dinner, guests will be given the opportunity to learn more about Kujira Whisky, Ama, and the incredible team behind the cocktail and raw bar.

The Michelin-recommended restaurant seamlessly blends Nikka Whisky artistry with Asian and Pacific Northwest ingredients in a five-course dinner. Set in the heart of Gastown, guests will experience the harmonious fusion of culinary craftsmanship and Nikka spirit excellence as each dish is thoughtfully paired with Nikka creations.

Limited seating ensures a refined atmosphere, making it a not to be missed celebration of Nikka at PiDGiN.Furthermore, guests will have the exclusive opportunity to meet Naoki Tomoyoshi and Nozomi Odaohara of Nikka Whisky, who will be present to engage with attendees and share insights into the world of Japanese Whisky.

As a special addition, we will also welcome guest bartender Hisatsugu Saito from Bar OWL&ROOSTER in Sapporo to start the evening with a cocktail creation from his town in Hokkaido, Japan.

Let Shinobu & Clough Club transport you back to the days of speakeasies and bootleggers with this one-night pop-up! Guests can expect a flight of three Shinobu-based cocktails (1-1.5oz each) with an array of perfectly paired small plates. Additional cocktails and snacks will be available to order during the two-hour “seating.” This is the perfect pitstop before dinner or after work!

About Clough Club: Named for Gastown’s old-timey, one-armed lamp lighter, this trendy cocktail den with vintage flair and irrelevant spirit will have you down a rabbit hole with its educated cocktailers steering the ship with unapologetically strong, adult drinks.

About Shinobu: Shinobu Distillery is located in Niigata (Koshi area) of Japan, famous for its “Three White” treasures namely snow, rice and sake. Quality whisky selected from all around the world is reserved in bourbon and sherry casks for more than 3 years and later finished with precious Mizunara oak in Japan. “Shinobu” in Japanese means forbearance, which is considered an important trait of Japanese culture; thus, the name reflects the spirit of making good whisky.

Friuli Flavours Unveiled presented by Campari Canada

This five-course, five-cocktail dinner will be an immersive dive into the culture of Friuli, Italy’s hidden gem. It will blend traditional ingredients with innovative cocktail pairings and small dishes that showcase the region’s culinary richness while incorporating locally sourced ingredients. The evening starts with a traditional aperitivo cocktail then ventures through favourites like the Gingerino, Friuli Manhattan and Amaro Espresso Martini. Each will be paired with a complementary dish for a multisensory journey through the distinctive tastes and aromas of the Friuli region and Carlino itself.
