For most issues of The Alchemist, we gather our tasting panel and sit in a room somewhere sampling our way through a dozen or so bottles of, say, rye whisky or vermouth. But with a pandemic upending everything, we couldn’t do that this time around. At the same time, since we’ve all been spending so much time chez nous, we wondered what our panelists were drinking at their own homes. So we asked them to recommend a bottle they consider essential for a home bartender, and what cocktail they’d make with it. This issue, our team comprises bartenders Sabrine Dhaliwal, Adam Domet, J-S Dupuis, Robyn Gray, Jay Jones, Trevor Kallies, Jeff Savage and Kaitlyn Stewart. Here’s what they had to say. This tiki punch recipe serves a crowd—so find some friends to help you out!

• 6 oz añejo rum
• 6 oz dark Jamaican rum
• 4 oz high-proof rum (such as Lamb’s Navy 151)
• 3 oz freshly squeezed lime juice
• 1.5 oz freshly squeezed pink grapefruit juice
• 3 oz falernum
• 1 oz pomegranate juice
• 2 tsp Pernod
• 10 oz filtered water

Garnish:
• 5 sprigs mint
• 3 cinnamon sticks, snapped in half
• 6 wheels grapefruit

Don the Beachcomber’s Mai Tai

Donn Beach—a.k.a. Ernest Raymond Beaumont Gantt, a.k.a. Don the Beachcomber—reportedly invented his version of the drink in 1933, when it was called a Mai Tai Swizzle.

• 1 oz gold rum
• 1.5 oz dark rum
• 1 oz (30 mL) grapefruit juice
• 0.75 oz lime juice
• 0.5 oz Cointreau or triple sec
• 0.25 oz falernum
• 6 drops Pernod
• Dash of Angostura bitters
• Mint sprig to garnish
