• 2 oz Tio Pepe Fino Sherry

• 0.5 oz lemon juice

• 0.5 oz simple syrup

• 6 mint leaves

• 1 pinch of salt

Add all ingredients to shaker tin, then add ice and shake. Strain into Collins glass filled with ice. Top with soda and garnish with 2 olives and a mint sprig.
