Ask Dylan Riches to trace his journey from the wilds of Prince George to bar manager at East Vancouver’s celebrated Published on Main, and he’ll ultimately suggest that he’s simply swapped one stage for another. 

“One of the things I love most about this industry is that the path is not the same for every single person,” Riches says at the award-winning restaurant. “I love talking to people in the industry, getting to know them, hearing about where they come from. Every person’s path has a different turn or twist.”

Michelin restaurant inspectors look for high-quality ingredients, personality of the creators on the plate, plus a harmony of flavours and mastery of technique—all consistent over multiple visits. The same ingredients go into a Michelin-quality bar, as Vancouver discovered on October 27 as the Michelin Guide granted world-class honours in the city for the first time.

Food industry judges from across Canada have determined that Vancouver’s Published on Main is the best restaurant in the country.

That restaurant ranked No. 1 in the 2022 edition of the foodie guide Canada’s Best 100 Restaurants, which was released today.
