With a puff of dry ice, the 2018 edition of Science of Cocktails has proven once again that physics, chemistry and thermodynamics are as important in your glass as the spirits and bitters.

Bartenders from all over Vancouver, as well as Calgary, Toronto, Halifax and Las Vegas, headed over to Science World last week to put their skills to the acid test.

Whisky raid leaves shelves empty, bar owners stunned

It’s the story that everyone in the BC booze industry is buzzing about: On Jan. 18, the provincial government conducted four simultaneous Prohibition-style raids on establishments in Victoria, Nanaimo and Vancouver and confiscated tens of thousands of dollars worth of liquor.

Their target? Bottles of the Scotch Malt Whisky Society’s unique (and expensive) whiskies.

Their reasoning? Although the bottles were shipped to B.C. under proper channels and all appropriate taxes paid, the licensees bought them through private retailers instead of government stores, which is not allowed.

The Old Fashioned is amazing — simple and complex at the same time. On paper it is minimal — spirit, bitters, sugar and water (via the dilution of ice) — but what is critical for an Old Fashioned is getting that balance right. You get the balance right, you have a beautiful cocktail, but if you don’t, there’s nowhere to hide. The fewer the ingredients in a cocktail, the more skill needed to make it.

Resurrection Spirits arises in East Van

City’s newest craft distillery is focused on making ‘spirits for bartenders’

A new artisan distillery opening up in B.C. isn’t exactly news these days. There are already 51 of them around, with another 13 in the works and as many as 80 licences floating around out there, according to B.C. Distilled founder Alex Hamer.

What is news, though, is when that distillery is co-owned and operated by one of Vancouver’s best bartenders.

Whether it’s the Big Lebowski’s White Russians, James Bond’s Vesper Martini or the French 75s Yvonne knocks back in Casablanca, there’s plenty to drink in when it comes to cocktails and the movies.

So when the Vancouver International Film Festival’s sponsorship manager Morgaine Jennings was looking for a fun new idea for the 2017 festival, which began Thursday, cocktails seemed like the perfect fit.

You can’t call something a classic until it’s been kicking around a while. But there’s more to it than that. A classic has a timeless elegance that feels so right, you can’t quite imagine the world without it.

Think Breton stripes, little black dresses, Hemingway’s novels, the Barcelona chair, Frank Sinatra’s velvet vocals and the Manhattan, Old Fashioned or Negroni – the LBDs of the cocktail world.

Here in Vancouver, you might think the cocktail scene is too young to have inspired any classics. You’d be wrong. Here are some of the city’s signature sips.
