Recipe by Emma Osmond of Odd Duck Wine & Provisions, Kitchener.

INGREDIENTS: 

0.75 oz Del Maguey Puebla Single Village Mezcal

0.75 oz  amaro

0.75 oz  bitter red aperitif

0.75 oz fresh lemon juice

1.5 tsp Sea Salted Honey Syrup (3:1) (see recipe below)

Garnish: Lemon zest, a tiny paper plane

METHOD: 

Add all ingredients (except garnish) into a cocktail shaker, add ice and shake well for 15 seconds. Double-strain into a coupe glass. Express lemon oil from the zest over the surface of the drink, discard, and garnish with the best paper plane you can make. Serves 1.

Sea Salted Honey Syrup (3:1)

INGREDIENTS:

1 cup honey

0.33 cup hot water

1 tsp sea salt

METHOD: 

Stir all ingredients until thoroughly incorporated and dissolved. Add more salt if needed.
