• 1 oz. spirit-free gin syrup (recipe below)

In a highball or Collins glass, build ingredients in order over fresh ice and stir. Garnish with fresh rosemary and lime. Serves 1.

Spirit-Free Gin Syrup

• 2 cups white sugar
• ½ cup cracked juniper berries
• 2 tsp cracked coriander seeds
• 8 cracked cardamom pods
• Peel of 2 oranges

Combine all ingredients in a sauce pot. Bring to a boil stirring frequently. Reduce heat to medium. Continue to simmer until reduced by half, about 10 minutes.
