We’ve been waiting impatiently to see what’s going into the grand space under the Rosewood Hotel Georgia where Prohibition used to be. We’ve been waiting just as impatiently to learn where Jeff Savage would land after leaving Botanist Bar last year.
As it turns out, the space has been transformed into the brand-new Prophecy, with Savage leading the bar, and we’re excited to share a peek of it with you.
Prophecy is, for one thing, gorgeous, all glamorous and moody in a design by Ste. Marie Studio. At once classic and contemporary, it will feature an evolving showcase of digital artwork and live jazz during the week and DJs in the late hours.
As beverage director, Savage brings with him plenty of cred, notably placing second in the 2019 Diageo World Class global championship. He’s teamed up with bar manager Nicole Cote, formerly of Michelin-starred AnnaLena and Published on Main. These two rock stars have crafted a fascinating journey of a menu, which is captured in a stunning Cocktail Book divided into libations Spirituous, Refreshing, Herbaceous or Lush.
These are drinks that tell a story, drawing inspiration from writers, musicians and artists, as well as time and place. There’s the Sirocco (sotol, amaro, chilies), described as “a song of wind and sand, scraped across carved landscapes”; a Martini they promise will become a local legend; and “Short Stories,” small serves with a distinctly literary flavour, like the Ponyboy (sherry, calvados, nutmeg), named for a character in S.E. Hinton’s The Outsiders.
There are also alcohol-free drinks, beer, wine and sharable snacks like fresh oysters, truffle fries and many more of our favourite things.
We have a prophecy, too—that this will quickly become Vancouver’s favourite new cocktail bar.
