• 1.5 oz gin or Cognac
• 0.5 oz freshly squeezed lemon juice
• 1 tsp simple syrup
• Champagne or sparkling wine
Shake gin or Cognac, lemon and simple syrup with ice and strain into a Champagne flute. (Or pour over cracked ice in a Collins glass.) Top with bubble, stir gently, and garnish with a lemon peel. Serves 1.
