This tall, refreshing, low-proof cocktail from UVA’s Sabrine Dhaliwal will ensure you remain bright-eyed throughout the night.
1½ oz (45 mL) fino sherry
¾ oz (22 mL) grapefruit juice
¾ oz (22 mL) peach tea syrup (see note)
¾ oz (22 mL) lemon juice
2 dashes Bittered Sling Cherry Bitters
Ginger beer
Combine all ingredients (except ginger beer) into a cocktail tin, add ice and hard shake vigorously for 7 to 10 seconds. Pour into a Collins or highball glass over fresh ice and top with ginger beer. Garnish with dehydrated lemon. Serves 1.
Note: To make peach tea syrup, brew 2 cups (500 mL) of peach tea (such as DAVIDsTEA Just Peachy or Silk Road’s Peach Paradise), then stir the hot tea with 2 cups (500 mL) of sugar until fully dissolved. Makes about 2½ cups.
