• 1.5 oz Johnnie Walker Black Label
• 1 oz Umé Shu plum wine
• 0.5 oz maple green tea cordial (see note)
• 1 dash cardamom bitters
• 3oz club soda
• Garnish: sprig of rosemary, optional candied pine cone.
Build all the ingredients in a highball glass filled with ice. Garnish with a sprig of rosemary and, if you like, a candied pine cone. Serves 1.
Note: To make the cordial, simmer 2 cups green tea with 0.75 cup maple syrup and 0.5 tsp citric acid, stirring until dissolved. Keep chilled in a a clean glass jar for up to 1 month.
