Quince Royale

INGREDIENTS:
• 1 oz (30 mL) sake
• 0.5 oz (15 mL) quince syrup (see below)
• 0.75 oz (22 mL) lemon juice
• Sparkling wine
• 3 healthy dashes Ms. Better’s Lime Leaf bitters

METHOD:
Place sake, syrup and lemon juice in the bottom of a champagne flute. Top with sparkling wine and stir gently. Add bitters and, if you like, garnish with a spiral of citrus peel. Serves 1.

Note: To make quince syrup, place 1 cup (250 mL) sugar and 1 cup (250 mL) water in a saucepan along with the contents of a small jar of quince paste. Bring just to a boil, stirring constantly, then reduce to a simmer for 10 minutes or so. Remove from heat, cool, then fine strain. It will keep, chilled, for about a week.
